Chili Con Carne 2 cans (17 oz.) dark red kidney beans 2 lbs. lean ground beef 1 onion, chopped 2 cans (15½ oz.) tomatoes, diced 1 green pepper, chopped 2 cans (15 oz.) tomato sauce 1 bay leaf 1 tsp. chili powder 1 tsp cumin 1 tsp. cayenne pepper (or more, if preferred) ½ tsp. crushed red pepper (optional) 1/8 tsp paprika Dash of salt & pepper Season ground beef with salt and pepper and brown until done. Remove meat and sauté green peppers and onions until soft. Combine all ingredients into a stew pot. Bring to a boil. Then simmer for about 1 hour.
